I have made this dish so many times, using many different methods - pre-cook the vegetables/cook them raw in the sauce/bake or fry the vegetables first etc. etc….This version is my favourite as it makes the cauliflower tender but not mushy. Delightfully flavoursome and a celebration of the king of vegetables (IMO!).
HOW TO REHEAT - Defrost at room temperature. Oven cook for 30 minutes at 180°c. Microwave cook for 4 minutes on highest setting.
