Saint Louis BBQ - Diced Breast // Wings

The taste of Southern BBQ is recreated here. Smoky paprika, blended with sweet and savoury spices and mixed with sharp tasting juices are massaged into the meat and refrigerated, allowing the citric acid to tenderise the meat and opening the door to flavour!

OUTDOOR COOKING - Laid over a charcoal BBQ, turning often for approximately 15 minutes.

INDOOR COOKING - Stage 1: on a very hot griddle pan to sear both sides, turning once. Stage 2: In the oven or an Air Fryer at 180°c for 10 minutes (thighs) or 20 minutes (wings).

KELL'S CHEFY TIP - Dip the cooked chicken pieces into a KK BBQ sauce after the chicken has come out of the oven/air fryer whilst they are still hot, rebake for 10 minutes for a sticky texture.
