I've eaten this so often, at home and in Spain, it's utterly scrumptious! Simple, effective, wholesome and delicious. Slow cooked aubergine, peppers, onions and tomatoes (verduras), it's the Iberian ratatouille brother of higher standing. Soooo good.
HOW TO REHEAT - Defrost at room temperature. Oven cook for 30 minutes at 180°c. Microwave cook for 4 minutes on highest setting.
